Eww . . . How Much Grease/Fat in Ground Beef?

One of my favorite ~and most used~ kitchen tools is my Stack Cooker by Tupperware. I've had it for 15+ years. I originally bought it so that I could cook meals in my microwave, but I soon discovered what it was most handy for; browning ground beef. It only takes 6 minutes per pound, but the best thing is that it drains off the grease/fat while cooking.
This is a picture of how much grease/fat is cooked off of 1lb of ground beef. I don't get that much grease/fat off when I brown it on the stove.

The other tool that I use when I brown ground beef is from Pampered Chef. It's the Mix'n Chop.

Easy Tacos
1 lb ground beef
1 pkg taco seasoning
Sour cream
Shredded lettuce
Grated cheese
Salsa
Taco shells

Place ground beef in Colander inside of 1 3/4 qt Casserole, cover and microwave for 3 minutes. Break-up meat with Mix'N Chop and return to microwave for 3 minutes. Remove meat from colander and place in 3 qt casserole, add taco seasoning and 1/2 pouch of water. Stir well; and microwave covered for an additional 2 minutes. Serve with toppings of choice.

Easy Microwave Chicken

You will need a Deep Covered Baker from Pampered Chef for this recipe.

Chicken breast halves
Olive oil
Roasted garlic seasoning ~or your favorite seasoning for chicken~
½ pkg of frozen Pepper and Onion blend

Brush chicken breasts with olive oil and sprinkle with seasoning ~on both sides. ~ Place chicken in Deep Covered Baker. Depending on how many chicken breasts you use, you may have to layer them. Cover with frozen veggies. Cover and cook in microwave for about 8 minutes if you have 1 layer of chicken or 12 minutes if you have 2 layers of chicken.

You will not believe that this was made in the microwave. It’s moist and delicious. It’s great on a salad or by itself. Enjoy!

This is a great recipe for keto.

Easy Tilapia

Easy Tilapia

4 – 6 Tilapia filets
Olive oil
Garlic salt
Lemon juice
Parmesan cheese

Brush tilapia filets with olive oil and sprinkle with garlic salt on both sides. Place in casserole, splash with lemon juice and bake in a preheated 375 deg oven for 10-12 minutes. Remove and sprinkle with parmesan cheese and put back in oven for about 2 minutes.

You can make this in the microwave, but you’ll need a Deep Covered Baker from Pampered Chef. To do this, place fillets in Deep Covered Baker, splash with lemon juice, cover and cook on high for 6 minutes; after sprinkling with parmesan cheese, cook for another minute. If you have to layer the fillets, it may take an extra couple of minutes. This recipe is perfect for doing in the summer. It is moist and tasty. My hubby can’t believe that it’s done in the microwave.

If baking in the oven, I recommend using a stoneware piece from Pampered Chef. You won’t believe the difference

What's For Dinner?

Last night I cooked dinner totally in the microwave. I did Baked Chicken Supreme, Della Gourmet Rice and Broccoli cuts. I used my Deep Covered Baker from Pampered Chef for the chicken and my Heat ‘N Serve container from Tupperware for my rice. My rice cooker that came with my hubby when we got married 21 years ago gave up the ghost. I’ve got to decide if I want another like it or a microwave one. I usually cook with brown rice, ~which takes 45 minutes and I don’t want to tie up my microwave for that long~ so I’m thinking another electric one. It is so hot here in Memphis that I don’t use my oven during the summer. A couple of months ago, I had a Pampered Chef cooking show so I could get the Deep Covered Baker. My main reason for wanting it was to cook Pork Tenderloin in the microwave. I’d seen a recipe for cooking chicken in the microwave in the Deep Covered Baker, so I thought I’d try one of my own in it. It was awesome. My husband didn’t know that I cooked it in the microwave. It even passed his taste test. ~That’s saying a lot!~

I’m a kitchen gadget junkie. I once had a friend call me the Bob Vila of kitchenware. I love Tupperware and Pampered Chef and the Williams-Sonoma outlet here in Memphis. If you don’t have a friend who is a consultant, go to their websites and find one. Pampered Chef’s stoneware collection is the best and since I’ve found that I can use it in the microwave, I may never use my oven again. Just kidding! Anyway, tonight I’m going to try chicken with a southwest flair. I’ll let you know how it goes.

Baked Chicken Supreme

1/2 cup wheat germ
1/3 cup grated parmesan cheese
1/2 tsp salt
1/8 tsp pepper
6 boneless chicken breast halves, cut in half and skinned
1/4 cup milk
1 stick of butter, melted
1/2 T crushed garlic
squirt of lemon juice
paprika

Combine wheat germ, parmesan cheese, salt & pepper. Dip each chicken breast in milk and then wheat germ mixture. Arrange in a 8 X 12 baking dish. Combine melted butter, garlic and lemon juice; pour over chicken. Sprinkle with paprika. Cover with foil; bake @ 350 deg for 1 to 1 1/4 hours.

I like to serve it with brown rice. You can't beat the butter drippings over rice.

Microwave Version:
Arrange chicken in Deep Covered Baker from Pampered Chef's stoneware collection. To get all the chicken in, layer. Pour melted butter mixture over all. Cover; cook on High in microwave for 12 minutes. Let set for at least 5 minutes before serving.
