Mini Margarita Cupcakes


I have started making mini-cupcakes instead of regular cupcakes.  They are much cuter and fewer calories ~unless you eat three of them LOL~

Margarita Mini Cupcakes

1/2 cup unsalted butter ~room temperature~
2/3 cup sugar
3 eggs ~room temperature~
1 1/2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
Zest of two limes
1/4 cup margarita mix ~the liquid prepared type~

Beat the butter until pale, then add the sugar.  Add one egg at a time, blend until all is incorporated.  Add flour, baking powder and salt; followed by margarita mix.  Then add the zest.

Fill lined mini cupcake pan with batter until 2/3 full.  ~I use my Pampered Chef Medium Scoop~  Bake at 350 deg. for 11-13 minutes.  Cool on racks.

*The original recipe makes regular cupcakes so if you are doing that bake for about 18 minutes.

Margarita Frosting Recipe
1/2 cup butter ~room temperature~
1/2 cup shortening
4-5 cups powdered sugar
3 T. margarita mix

Beat butter and shortening until smooth; then add powdered sugar along with margarita mix.  After frosting cupcakes, sprinkle with a pinch of margarita salt.


*I use a disposable decorator bag with a small star tip to frost my mini-cupcakes.  Much prettier and faster.
